The Astro Dispatch site is doing a series on the 7 deadly sins as they relate to creativity and astrology. One is gluttony:
"In creativity, gluttony can show up in different forms. It can be describing an idea in 500 words when 100 words would do it just as nicely. Or always buying another tool in the hope it’ll make you a better artist. Or spending too much time on thinking, learning, reading about creativity, a certain style, on how to use a specific technique, genre …. fill the blank instead of actually exercising my creativity! It’s gluttony disguised as procrastination!"
Hmm, I always thought it was insecurity...but I'm too insecure to insist that I'm right...
Seriously, whatever is behind it, it's a common problem. I like Michael Masterson's approach (and book of the same name): "Ready, Fire, Aim!" In other words, do the minimum amount of preparation required, do the task, evaluate your results, adjust accordingly and then do it again.
If your issue is buying more and more tools (like software) try not buying one until you've learned and actually implemented the last one you bought (as I write this, I'm saying "Physician, heal thyself").
